Food Friday {Stafford Virginia Photographer}

Whew – It’s been a while since I’ve chimed in with a “Food Friday” entry.  I guess that’s what happens when spring schedules and sports start – not as much time left for cooking.  I’m sure all you parents out there understand that! 

Today’s recipe is Polenta Sausage Mozzarella Casserole.  It’s is super easy to make and really delicious!  The recipe below calls for prepared polenta but I bought the dry stuff and made it myself.  I had to ask at the local grocery store and found the dry polenta in the Italian foods section.  Just prepare the polenta first according to the package and then follow the recipe.  (I used 4 cups water to 1 cup of dry polenta.)   I also omitted the bell pepper (otherwise my kids wouldn’t have touched it! LOL!)  Serve this with a nice green salad and you’re all set.  Enjoy!
