My daughter is becoming quite the little cook. A year or so ago she started collecting recipes and decorated her own recipe box that sits on the counter in our kitchen (complete with her name in rainbow colors and sparkly heart stickers.) For her birthday, she was thrilled to receive her very own cookbook, Fix-It and Forget-It Kids’ Cookbook: 50 Favorite Recipes to Make in a Slower Cooker. (Thanks Aunt Julie :)) She quickly sat down to scour the pages for recipes to try. When I saw this one for baked potatoes in the slower cooker I knew it would be great for busy nights filled with baseball practice and dance class. We all love baked potatoes and what could be simplier? I love it too because everyone can choose their own toppings and it’s a great way to use up some leftover meat or veggies you may have in the frig!
The Simplest “Baked” Potatoes from Fix-It and Forget-It Kids’ Cookbook
Wash and dry one big baking potato per person. With a fork, prick each potato at about 6 different places all over. Wrap each potato in aluminum foil and place in your slow cooker. Do not add water. Cover. Cook the potatoes on high 4-5 hours or low 8-10 hours or until soft when you prick them with a fork. If cooking on low, check at about 4 hours (on high check at 8 hours.) My slow cooker cooks very hot so I typically only need the minimum cooking time suggested. Serve with chopped broccoli, shredded cheese, green onions, sour cream/ranch dressing, bacon, ham…or whatever toppings your family enjoys!

What a great idea. Great to have a chef in the family. Savannah want’s to be a baker. She got an Easybake oven for Christmas from Aunt Heather. Not good for my waistline. Like the cookbook idea. May help with Reading and Math as well. Her birthday is in April. Will have to get that cookbook for her. Thanks for the post.
