This summer were are participating in a CSA at a local farm – Snead’s Farm. Between that and our own garden we are overflowing with zucchini! I was trying to find some other ways to use it and came upon this recipe for Chocolate Zucchini Bread. Chocolate??? It has to be good, right? 🙂 And I love that this recipe substitutes applesauce for much of the oil. The only change I made was substituting all-purpose flour for the cake flour and adding an additional 1/2 tsp of baking powder. YUM!
