I was shopping last week at Wegmans (LOVE that place) and saw these beautiful Meyer lemons. They reminded me of summer and warmer weather. Considering we just had a snow day that week, I couldn’t resist something so bright and cheery to warm up my day! I came home and after some researching came up with a lemon muffin recipe. These aren’t too sweet and have a nice subtle lemon flavor. (For more lemony goodness, you could add a touch of lemon extract.) I froze most of the batch and have been enjoying then as a great grab and go breakfast or snack. And they only have about 100 calories per muffin. Not bad! 🙂
Meyer Lemon Muffins
(makes about 20 muffins)
- 1 cup cake flour
- 1 cup whole wheat flour
- 2 tsp baking soda
- 1 egg
- 1/2 cup honey
- 1/4 cup canola oil
- 1/2 cup fat-free milk
- 6 tsp Meyer lemon juice
- 4 tbsp fresh Meyer lemon zest (about 3 medium lemons)
- 1/2 cup unsweetened applesauce
Preheat oven to 350 degrees. Line muffin tins with paper baking cups. In medium bowl, whisk together flour and baking soda. In large bowl, whisk together the remaining ingredients. Add the flour to the wet ingredients a little as a time, whisking as you go. Divide batter among muffins cups filling each about 1/2 full. Bake for 20 minutes or until a toothpick poked in the center of a muffin comes out clean. Enjoy!
MomWOW, they sound wonderful and to think I have some of the lemons available next door to me. Will definately try them. Uh…Maybe you should save a few for when we are there at Easter.:) Ahhhh so proud of my resourceful daughter. You make a Mama proud!!!
