Fall is here…Apples!

When fall comes around I always look forward to apple picking!  The past couple of years, we didn’t quite have our timing right.  One year it was too early in the season (and too hot!)  Sorry – picking apples in sweltering heat and shorts and just doesn’t spell FALL to me!  The next year we waited too long and most of the trees were picked over.  But this year…we hit it just right!  A few weekends ago we headed up to the Graves Mountain Harvest Festival for some fall fun and apple picking.  We’ve realized though that we have a problem when it comes to picking our own fruit in that we don’t know when to stop!  Well, two big boxes (and an extra bag of golden delicious) later we left!  It was all worth it though.  The kids had a great time climbing the trees and reaching for that perfect apple.  And we’ve been enjoying lots of yummy apple treats!  Here’s one recipe we tried this weekend…Apple Chip Oatmeal Cookies.  We took a batch to church on Sunday and they were snatched up in no time!  Enjoy!

Apple Chip Oatmeal Cookies

  • 1 c shortening
  • 1 c brown sugar, firmly packed
  • 1 c sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 c quick cooking oatmeal
  • 1 c butterscotch chips (I think I put the whole bag in b/c I LOVE butterscotch chips! :))
  • 1 c peeled, chopped apples

Cream together shortening and sugars.  Add eggs, one at a time, beating well.  Add vanilla.  Sift together flour, baking soda, and salt.  Add to creamed mixture, mixing well.  Add oatmeal, chips, and apples.  Drop by teaspoonfuls onto greased baking sheet.  Bake at 375 degrees for 10-12 minutes until done.  YUM!
